Today's recipe

Sweet, Sweet Mango Rice


If you can’t manage the cruise to Barbados this year, this is a great way to bring a little warmth of the ‘Islands’ to your table. It may be tricky to find ripe mangoes in the middle of winter, but well worth the bribes and risk of dysentery. This dish will become a weekend favorite!

2 cups sweet rice
1 can coconut milk
1/4 c sugar
1/2 tsp sea salt
2 mangos, peeled and sliced

Soak the rice for 4 hours in water. Discard water and rinse rice well. Steam rice for 30 minutes.
Meanwhile bring the coconut milk to a low boil. Add sugar, simmer and stir until fully dissolved. Stir in the salt and remove from heat.

As soon as the rice is steamed place it in a serving bowl and stir in half of the coconut milk sauce, (keep the other half warm).
Let rice stand for 15 minutes to absorb the coconut milk sauce, then spoon rice onto serving plates. Top with mango slices and the spoon warm coconut milk sauce over the top. Ideally, serves 8.


Note: increased consumption of coconut milk may result in rapid weight gain, and in some cases, mild anal leakage.
